A classic pot roast, and an economical cut. Cook in a closed pot with roughly chopped onion, celery, leeks and carrot, a bay leaf or bouquet garni and some red wine at about 160 degrees for 2 hours or so. From traditional beef breeds raised at Newbarn Farm, Shorwell. Suitable for home freezing.
