Fresh local Island rabbit, ready for the pot. Rabbit meat is very lean and tastes a bit like chicken - its not 'gamey'. As rabbit is lean, its best cooked long and slow in a casserole - try rabbit with tomatoes and garlic, cream and mustard or fruit like prunes. You can roast rabbit, but treat it like pheasant or partridge and cover with streaky bacon. At some times of the year these may be supplied frozen. Prepared for us by Hamiltons Fine Foods in Newport. Every effort is made to clean the rabbits, but they may contain shot.
