Rib roasts

A rack or crown of lamb is a beautiful alternative to a large roasting joint. Racks generally have 6 chops, and the crown has about 12 chops. A guardsman is two racks interlocking, and a crown is a tied ring of racks - makes a great centrepiece! The meat comes from Masham-cross sheep raised at Newbarn Farm, Shorwell.
