Shoulder roasts

Shoulder of lamb, boned or whole. Why not do a Jamie Oliver and slow roast the shoulder for 4 hours until it falls off the bone? Shoulder is fattier than leg, and slow-roasts really well, keeping its moisture. Lamb from Newbarn Farm, Shorwell or other Island farms.
